A couple of months ago I found myself at a networking event eating the most delicious piece of cake I’ve ever had. This was no ordinary cake; although the cake was light and simple, the flavors were clean and rich and the texture was perfectly moist. For the fist time ever in my life one slice of cake was not enough.
The extraordinary baker that made that yummy cake is Janderyn, she is the owner and founder of Earth & Sugar, an all natural & organic bakery located in West Palm Beach, Fl.
Earth & Sugar has been in business since 2009 and ever since they opened to the public, their cakes have been the center of attention at many weddings and social events in South Florida.
Inspired by the memory of fresh crepes and homemade preserves that her Nana used to cooked for her, Janderyn puts all her love and knowledge into designing and baking cakes that will blow you away!
At consultations she takes the time to understand her clients’ needs and wants, plus she also takes into consideration the aesthetic of the events. Knowing all those details allows her to craft wedding cakes and desserts that represent her clients’ visions, while incorporating fresh ingredients and new flavors into a cake that will have you craving a second slice.
All the cakes and desserts created by Earth & Sugar are made only with organic products. They take pride in using products from the local farmers and knowing that with their choice they are giving their clients a product that is rich in flavors, while being free from GMO’s and preservatives .
The creativity of Earth and Sugar is taking baking to a new level. The picture above is a a delicius Panna Cotta with edible flowers. Not only did it look pretty, but it tasted amazing!
Another ingredient that took me by surprise was Lemon Basil. Early that morning, Janderyn had gone to Swank Farm to pick up some fresh herbs and edible flowers for a special wedding cake she was making.
She decided to incorporate the fresh lemon basil not only into the actual cake, but also infused it with a lemon basil syrup. I am telling you, her creativity and passion to incorporate local ingredients into her cakes and desserts is brilliant and inspiring!

Lemon Basil Syrup Recipe by Earth and Sugar
- 1 cup of organic evarporated cane juice
- 1 cup of water
- 1 bunch of lemon basil ( about 4 cups)
Combine the evaporated cane juice, water and lemon basil bunch. Bring to a boil while stirring. Allow to cool.
You can mix this simple syrup into your favorite vanilla butter cream. Add a little fresh lemon zest for that extra pop of flavor.
The final look of her cakes is spectacular. Not only does she uses the best organic ingredients available, but she also adds fresh flowers to the decoration of the cake.
